CENTRAL JP—A new coffee bar called 7 Pond is under construction at 7 Pond St. It aims to open in early November, owner Maks Milstein told the Gazette.
The new spot will be a bar, not a café, Milstein explained, because of its small space and ambiance.
“It’ll be a morning rather than an evening bar,” he said. “It will be a place for the community to socialize over a psychoactive beverage [coffee], not a place to camp out with your laptop and headphones.”
The menu will feature espresso-based drinks and made-to-order “pour over” coffee. Most of the beans will be “single-source,” or unblended, Milstein said.
“The pour-over method is an excellent way to offer different varietals of coffee without having to brew in large batches,” he said. “The idea is to serve coffee JP has never had before, in terms of quality.”
The menu will also likely include pastries provided by a “new up-and-coming baker,” Milstein said, though he declined to name the baker until negotiations were complete.
